THIS IS MY CHILDHOOD!

 

Also known as "Kathy's Cornbread", but if I call her Kathy, I'll get in trouble.

INGREDIENTS:

1 cup flour
1 cup Sugar
1 tablespoon + 1 teaspoon baking powder
3/4 teaspoon salt
1 cup corn meal
1 cup milk
2 eggs
1/4 cup oil
1 teaspoon vanilla

DIRECTIONS:

Add all ingredients and stir until mixed. Do not over beat. Pour into 9"x9" greased baking pan. Bake in 350°F oven for 25 minutes or until done. Watch carefully and if it starts getting too brown, cover with foil.
This cornbread is my absolute FAVORITE. Serve buttered, or with honey!
If you really want a treat, stuff it into a glass, and pour cold milk over the top! (This is a delicacy. Ha!)
