This mango salad is so yummy! So easy to make, delightfully colorful, and always a hit in our family!

 

Ingredients

2 ripe mangoes peeled and diced into ½ inch cubes
1 ripe avocado peeled and diced into ½ inch cubes
½ 1 small red onion thinly sliced
juice from 1 small lime

Instructions:

Use small mixing bowl and combine all ingredients.
Gently fold ingredients together using soft rubber spatula.
Serve immediately. (We all know what avocados like to do when they sit)

Notes:

Garnish with fresh cilantro, consider chopping some and adding to the mix.
A dash of balsamic vinegar can be added for a slight bend on the flavor profile. Note that this will blunt some of the vibrancy of this salad's appearance. As always, use a quality aged balsamic vinegar.
